Oliver Glowig at VIVO: Two Michelin-Star Chef Bringing Italian Seafood Surprises to the Nile Ritz-Carlton

Since opening just over two years ago, The Nile Ritz-Carlton has emerged as a favourite amongst the often overly-discernable foodie contingent in Cairo. But between the 22nd and 25th of November, the Downtown hotel is set to welcome back a man that has already blessed Cairo with his culinary acumen – two Michelin star Chef, Oliver Glowing.
Following the rousing success of his exclusive white truffle menu last October, Glowig is set to weave more magic in the Vivo kitchen with a special seafood menu.
Working in collaboration with Vivo’s chef de cuisine, Carmine Diluggo, and the skilled Italian restaurant’s team, Chef Glowig has quite the treat in store for seafood lovers, with a selection of dishes that pull together that very particular joy that only fresh seafood delivers, with Glowig’s signature Italian style.
The gourmet menu features several intriguingly creative dishes, including Octopus with egg and chickpeas, squid ink ravioli with mussels cacio and pepe in tomato consommé, homemade squid gnocchetti and asparagus and white seabass fillet in fish soup with braised tomato, as well as sinful dessert, bignè with gianduia chocolate, pumpkin and hazelnuts. Yum.
But creativity is just one element to Chef Glowig’s gastronomic greatness. Equally as important is the fact that the chef has mastered and understands the significance of the Italian classics and basics; it’s this understanding that allows him to put his owns pins and experiment so successfully. Thrown in Glowig’s unflinching use of only the best and freshest ingredients and you have one of the most potentially memorable dining experiences you’ll find anywhere this year.
